A couple of months ago I discovered this amazing popcorn called Bjorn Corn (literally popped by the sun, and tossed with nutritional yeast for a natural cheesy flavor that’s dairy free). It inspired me to experiment, and after a few failed attempts, I happened upon our new favorite snack!
Most of what you need for this crave worthy popcorn is probably in your kitchen already, and the key to popping the maximum kernels without burning is in step 2.
Serves 2-3, and can easily be doubled for a crowd!
2 T coconut oil
Salt to taste
1/2 cup peanuts or pecans (optional)
Step 1: Bringing the oil up to heat
Put your coconut oil & 3 kernels of popcorn into a heavy pot over medium high heat. Listen for the 3 kernels to pop.
While you wait, melt 1T butter in another pot, and stir in nuts if using.
Step 2: Pause
When all 3 kernels pop, remove them from the pot, add your 1/3 cup kernels, and cover. Remove your pot from the heat for 30 seconds.
Step 3: Pop
Return pot to the medium high heat and let stand, shaking the occasionally, until the popping slows – about 2 minutes.
While you wait, keep stirring the melted butter and nuts, allowing them to brown slightly. Remove pot from heat & stir in 2 teaspoons honey & salt to taste.
Step 4: Mix & shake
When the popping slows, pour popcorn out into a large bowl, then toss with honey/butter/nuts until well mixed. Taste & add more salt if needed.
* 2t honey will deliver a nice subtly sweet treat. Experiment with the amount of honey if you like treats that are more or less sweet.
